It started the way the best partnerships do, through people who already trusted one another. A mutual business connection introduced our leadership team to Chef Jordan Swim and the team at Vestals Catering, and what began as a casual conversation turned into another, and then another. The more we talked, the clearer it became that this wasn't simply two businesses that happened to be a good fit. It was a partnership worth building.
Vestals Catering didn't begin as the premier catering company it is today. Chef Jordan started it out of a home kitchen nearly twenty years ago and built it into one of the most respected names in Dallas catering through nothing flashy, just the Texas values of good food, hard work, and the kind of relationships that keep people coming back. The Hills of Avalon isn't about what's flashy, and neither is Vestals. Theirs is a true scratch kitchen, sourcing seasonally and leaning on local partners whenever possible. Every menu is built around the people it's meant to serve, never pulled from a template.
That approach felt familiar to us. The Hills of Avalon was built the same way, from the ground up, with a great deal of hard work and a belief that the details matter. When we sat down with the Vestals team, we didn't just find a caterer we liked. We found a group of people who think about hospitality the way we do, rooted in family, built on relationships, and centered on making guests feel genuinely cared for.
So we didn't add Vestals to a vendor list. We built something more permanent, a true partnership between two companies that believe in doing things right. It's the kind of relationship we hope you feel the moment you sit down to your first tasting, and every time after.
